Zootopia: Judy Hopps

Light, refreshing, and inspiring, this Judy Hopps inspired carrot and ginger cocktail is the perfect thing to come home to after a long day on the carrot farm, or the streets of Zootopia. Don't let not being a bunny hold you back from trying this delicious, mellow concoction. It's easy to make your own carrot juice if you have your own juicer, but if you don't have one, not to worry! You can find bottle carrot juice, like Naked Juice online and in many stores. Even easier, many health food stores and juice bars will provide you with carrot juice, provided you bring them the carrots!

Combine rum, carrot juice, lime juice and simple syrup in a shaker with ice and shake until cold. Fill a collins glass half way with ice. Strain mixture into the glass, then fill the rest of the glass with ginger beer, which should take about 6 ounces. Garnish with a lime wheel and enjoy! Wanna see a bunny go savage? Just try taking this drink away from them after a sip or two!

Ingredients:
2 oz silver rum
2 oz carrot juice
½ oz lime juice
½ oz simple syrup
Ginger beer

Make it a mocktail:
Young bunnies shouldn't have to miss out on the fun, so feel free to whip up this cocktail without the rum! Most kinds of ginger beer are alcohol free, like root beer, so everyone can enjoy this sweet, fizzy treat without having to worry.

Makes:

1 cocktail

Shocked you didn't capitalize on the "hops" pun by making something beer-based.

That would have been fun! Because the source material was aimed at a younger demographic, we wanted to be able to make it kid-friendly and have an alcohol free option. Since ginger beer doesn't have hops and none of us know how to make anything that isn't revolting out of non-alcoholic beer, we went with carrots!
