Combine rum, carrot juice, lime juice and simple syrup in a shaker with ice and shake until cold. Fill a collins glass half way with ice. Strain mixture into the glass, then fill the rest of the glass with ginger beer, which should take about 6 ounces. Garnish with a lime wheel and enjoy! Wanna see a bunny go savage? Shocked you didn't capitalize on the "hops" pun by making something beer-based.
That would have been fun! Because the source material was aimed at a younger demographic, we wanted to be able to make it kid-friendly and have an alcohol free option. Since ginger beer doesn't have hops and none of us know how to make anything that isn't revolting out of non-alcoholic beer, we went with carrots!
